I'm using 4.12.0-1-amd64.

How can I savely install the kernel 4.14 via stretch-backports?

If you don't want to activate the stretch-backports sources in sources.list you can download these packages and install them.
That should work however virtualbox-guest-dkms and virtualbox-dkms will fail to build against that kernel I suppose.

https://packages.debian.org/stretch-backports/linux-headers-4.14.0-0.bpo.2-amd64

Can I now deactivate the stretch-backport sources in sources.list? Or doesn't it matter?

You should deactivate the stretch-backports in sources.list if it was deactivated before.
